4 tbsp ground almond
2 tbsp jam to your liking
2 tbsp sugar or sweetener
3 tbsp corn flour
1 tbsp butter
a few drops of vanilla (or 1 vanilla)
1 pinch of salt

Put the fruit in a bowl. Add the salt, the vanilla, the sugar, the jam and mix. Sprinkle the corn flour and mix with a spoon. Set aside the filling.

Open the puff pastry and place it on a baking tray lined with non-stick paper.
Leave an imaginary gap of 5-6 cm on the surface of the dough and spread with egg yolk.
Sprinkle the ground almond in the center.
Place the stuffing with the fruit on the ground almond, on a hill.
Turn the edges of the puff pastry on the fruit leaving a gap in the middle. Leave the galette open in the center.
Spread the butter in small pieces on the surface of the fruit.
Spread the galette around the perimeter with egg solution or only with egg whites. This is how our puff pastry will shine.
Bake the galette in a well preheated oven at 200 ° C in the air, on the middle grill, for about 45΄ to brown all around.
Let the galette cool for about 20΄ and slightly stabilize the fruit sauce in its heart.
Serve in pieces with ice cream or whipped cream.

The galette can be made salty, but in the sweet galette we put whatever seasonal fruit we want or even compote or frozen fruit.
If you have time, leave the galette after filling it, for 15΄ in the fridge to freeze well before putting it in the hot oven.
The oven must have reached a temperature of 200 ° C so that the puff pastry does not spread and immediately take up volume. This will correct the puff pastry.
