For decades, it is one of the most popular dishes in Hawaiian cuisine and is certainly the most famous of the flavors of the Pacific Ocean’s culinary tradition. It has even evolved into a global food trend. So the poké combines cubed fish, fresh vegetables, rice and sauces in a tasty effect that doesn’t take much effort to produce. You can easily make it at home by following the tips, tips and tricks below.
Rice and fish
The two most important ingredients for making a good poké are of course rice and fish. As for the former, Japanese chunk – which is also used for sushi – is the most appropriate but the job can be done with any other white chunk – to God, don’t use basmati. Once cooked, you should let it cool. In the second leg, this fish made sure that it was not thawed at 100% so that it could be cut into cubes more easily, without compromising its consistency. If it is fresh again, prefer it completely raw – if it doesn’t fascinate you can sauté it, having previously cut it into cubes. Remember, too, that no spice or sesame seeds should be added to the fish before serving, as it may lose the flavor and deteriorate its appearance.
Beware of mangoes
One of the most appropriate ingredients in a poké is mango. You just have to choose the right one, which in this case is the mature one. To understand this, there should be red, yellow and orange shades around the stem. If it is green, there is the risk of it being completely tasteless and dry.
The other materials
One of the most popular poké recipes includes mango, avocado, onion and cucumber. This does not necessarily mean that you need to limit yourself to them. You can put everything in your fridge on the plate by simply cutting it into cubes. Don’t worry, the margins of error here are limited. Also important is sesame oil, which shapes the character of the sauce.
Materials (for 3-4 servings)
- 240 g rice
- 300 g tuna or salmon
- 1 ripe avocado
- 1/2 ripe mango
- 1 cucumber
- half onion
- 0-60 ml soy sauce
- 10 ml of rice vinegar or lemon juice
- 1/2 tsp honey
- 2 tbsp. sesame oil
You start with the rice, placing it under running water to remove all the starch, and then boil it over medium heat for about 15 minutes, before lowering the heat and leaving it covered until the water is completely absorbed. When ready, put it in a bowl and let it cool.
Chop onion, mango, cucumber and avocado into cubes. At the last, pour a few drops of lemon juice so it does not turn black. You put it aside and you are dealing with the sauce.
In a small bowl mix all the ingredients and add some sesame seeds to it.
Once you have cut the fish into cubes, mix well with the sauce.
Put the rice in bowls, add the fish and the cut ingredients. Add extra sesame seeds and serve.
